Fatoush or Peasant Salad

A Middle Eastern salad of fresh produce and herbs

Fatoush
2 Cups shredded lettuce, romaine and/or iceburg
1 large or 2 small cucumbers
2 medium tomatoes, seeded and chopped
1/2 C. chopped parsley, no stems
1/4 C. chopped mint, no stems
1 green pepper, diced
1 bunch of green onions, finely sliced
1/2 to 1 tsp. sumac (found in the international aisle or Penzeys)
2 pieces toasted whole wheat pita bread, broken into pieces the size of a quarter

In a large bowl, combine ingredients and set aside/


Dressing:
1/3 C lemon juice
1/3 extra virgin olive oil
2 cloves garlic, minced
1 tsp kosher salt
dash freshly ground pepper


Combine ingredients.  Add to salad and toss lightly.  Serve immediately.


If you would like to lighten this up, drizzle dressing on individual salad plates.
I prefer the pita on the side, even though it isn't authentic.
